Thyroid Friendly Recipes :Sun-Dried Tomato Stuffed Chicken with French Green Beans.
Ingredients:
For the chicken:
2 large boneless, skinless organic chicken breasts
1/4 cup sun-dried tomatoes (not in oil), chopped
2 cloves garlic, minced
1 tbsp fresh basil, chopped
2 tbsp olive oil
Salt and pepper to taste
For the green beans:
1 lb French green beans (haricots verts)
1 tbsp olive oil
1 clove garlic, minced
1 tbsp lemon juice
Salt and pepper to taste
Instructions:
Preheat oven to 375°F (190°C).
Create a pocket in each chicken breast by cutting horizontally, being careful not to cut all the way through.
In a small bowl, mix chopped sun-dried tomatoes, minced garlic, and basil.
Stuff each chicken breast pocket with the sun-dried tomato mixture.
Brush chicken with 1 tbsp olive oil and season with salt and pepper.
Place stuffed chicken breasts in a baking dish and bake for 25-30 minutes, or until internal temperature reaches 165°F (74°C).
While chicken is baking, prepare the green beans. Bring a pot of salted water to boil and blanch the beans for 2-3 minutes until bright green and crisp-tender.
Drain the beans and immediately plunge into ice water to stop cooking. Drain again.
In a large skillet, heat 1 tbsp olive oil over medium heat. Add minced garlic and sauté for 30 seconds.
Add blanched green beans to the skillet and toss to coat. Cook for 2-3 minutes until heated through.
Finish the beans with lemon juice, salt, and pepper to taste.
Serve the stuffed chicken alongside the French green beans.
