Delicious Recipes for Underactive Thyroid: Mushroom Risotto for Hashimoto's
Ingredients:
1 cup arborio rice
4 cups low-sodium vegetable broth
2 cups mixed mushrooms (shiitake, cremini, oyster), sliced
1 small onion, finely chopped
2 cloves garlic, minced
2 tablespoons olive oil
1/4 cup nutritional yeast (instead of cheese) or dairy -free cheese
1 tablespoon fresh thyme leaves
Salt and pepper to taste
Optional: 1/4 cup chopped fresh parsley
Instructions:
In a medium saucepan, heat the vegetable broth and keep it warm.
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add mushrooms and cook until they release their moisture and become golden, about 5-7 minutes. Remove and set aside.
In the same skillet, heat the remaining olive oil. Add onion and garlic, sauté until translucent, about 3-4 minutes.
Add the arborio rice to the skillet and stir for 1-2 minutes until it's lightly toasted.
Begin adding the warm broth, one ladle at a time, stirring constantly. Wait for each ladle to be absorbed before adding the next.
Continue this process until the rice is creamy and al dente, about 18-20 minutes.
Stir in the cooked mushrooms, nutritional yeast, and thyme. Season with salt and pepper to taste.
If using, garnish with fresh parsley before serving.
