Thyroid Friendly Recipes: Pumpkin Soup
Ingredients:
4 cups pumpkin, peeled and cubed
1 medium onion, diced
2 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 tablespoon coconut oil
4 cups low-sodium vegetable broth
1 can (13.5 oz) full-fat coconut milk
1 teaspoon ground turmeric
1/2 teaspoon ground cumin
1/4 teaspoon cinnamon
Salt and pepper to taste
Optional: pumpkin seeds for garnish
Instructions:
In a large pot, heat coconut oil over medium heat. Add onion, garlic, and ginger. Sauté until onion is translucent, about 5 minutes.
Add pumpkin cubes, turmeric, cumin, and cinnamon. Stir to coat the pumpkin with spices.
Pour in the vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, until pumpkin is tender.
Remove from heat and let cool slightly. Use an immersion blender to puree the soup until smooth.
Stir in the coconut milk and heat gently. Season with salt and pepper to taste.
Serve hot, garnished with pumpkin seeds if desired.
