Ingredients:

  3. While the pumpkin is roasting, toast pine nuts in a dry skillet over medium heat until golden, about 3-5 minutes. Watch carefully to prevent burning.

  4. In a small bowl, whisk together 1 tablespoon olive oil, balsamic vinegar, honey, and minced garlic to make the dressing.

  5. In a large bowl, combine warm roasted pumpkin with fresh spinach. The heat from the pumpkin will slightly wilt the spinach.

  6. Drizzle the dressing over the pumpkin and spinach, tossing gently to coat.

  7. Top with crumbled goat cheese, toasted pine nuts, and dried cranberries if using.

  8. Serve immediately while still warm.
